L'illa de Mallorca està subjugada a una potent globalització  degut a la seva activitat turística. Els interessos econòmics i els depredadors agredeixen el medi ambient i  els recursos  naturals. Les arrels, la llengua, la cultura i la tradició gastronòmica  estan contínuament manipulades pels interessos i el poder dels tour operadors.

Dins aquest panorama la identitat musical intenta sobreviure.

FERMENTS és un tribut al treball de Miles Davis "Bitches Brew". És la història de tres dies de reclusió introspectiva dins un estudi de gravació tot cercant una connexió entre les noves generacions de músics de jazz i els aspectes més ancestrals de l'illa. Sense partitures, ni pautes establertes, només reaccionant a les percepcions sensorials, els músics, els ballarins, els cuiners i vinaters interactuen a la recerca de noves formes d'expressió. Tastar, ensumar, mirar i llavors crear.  Aquest és l'objectiu.

FERMENTS is a tribute to Miles Davis Bitches Brew album. Is the history of tree days introspection's enclosure into a studio recording looking for a link between young generations of jazz musicians and the most ancestral aspects of the Island. Without music scores, nor previous rehearsals, only responding to the sensorial perceptions, music, dancers, chefs-cookers and wine makers interact trying to achieve new ways of expression.
